This side dish is so easy peasy and tasty, you have no excuses not to give it a try. Watch the scope! The dish was done in 30 minutes and I was getting all kinds of sidetracked!

Grilled Garlic Zucchini & Squash with Lemon and Rosemary Print
- 2 tablespoons melted butter
- 3 garlic cloves, mashed and minced
- 1 tablespoon fresh grated onion
- Juice of half a lemon (fresh is best!)
- 1 teaspoon dried rosemary, ground
- 1 medium zucchini
- 1 medium yellow squash
- 2 tablespoons chopped fresh parsley
- Freshly ground pepper and kosher salt to taste
Slice the zucchini and squash in half inch slices and place in a medium size bow.
Add garlic, onion, rosemary, lemon, parsley and butter to the bowl and coat zucchini and squash liberally.
Heat grill pan at medium high heat. Place zucchini and squash in a single layer on the grill pan and cook until you get a char on one side. Then flip the veggies over and char the other side. (You dont want them burnt, just slightly charred and the veggies are slightly softened.)
Remove from heat and plate. Garnish with additional parsley.
